- 2 chicken breasts, tenderized with a mallet and cut into strips or bit-size chunks. Set aside.
- Saute chicken in olive oil with thinly sliced garlic - (not that "minced" stuff that comes in a jar)
- 2 bell peppers sliced into strips (not diced!)
- 1 large onion, quartered
- 1 large tomato, quartered
- Saute in the "chicken" olive oil - let the pepper and onion slices brown a bit
- 1/2 cup dry white wine
- 1 tbsp tomato paste
- 2 tbsp oregano
- 2 tbsp red pepper flakes
- 8 oz. can of diced tomatoes (not sauce!)
- 1/2 cup chicken stock
- blend in the chicken
