My Chicken Cacciatore

Now and then, when things get a little hectic, I whip up my Chicken Cacciatore for dinner. Most often, things calm down - and life is good again.

  • 2 chicken breasts, tenderized with a mallet and cut into strips or bit-size chunks. Set aside.
  • Saute chicken in olive oil with thinly sliced garlic - (not that "minced" stuff that comes in a jar)
  • 2 bell peppers sliced into strips (not diced!)
  • 1 large onion, quartered
  • 1 large tomato, quartered
  • Saute in the "chicken" olive oil - let the pepper and onion slices brown a bit
  • 1/2 cup dry white wine
  • 1 tbsp tomato paste
  • 2 tbsp oregano
  • 2 tbsp red pepper flakes
  • 8 oz. can of diced tomatoes (not sauce!)
  • 1/2 cup chicken stock
  • blend in the chicken

Let all this simmer on low for a few hours. Let the ingredients commiserate. Serve over pasta of choice with white or red wine. Finish the meal with a touch of Sambuca. There now - life is good, huh?
